Ingredients

  • 2 medium zucchini cut into fry-shaped sticks
  • 1 teaspoon kosher salt divided
  • 60 grams all-purpose flour
  • 2 large eggs
  • 100 grams panko breadcrumbs
  • 50 grams finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • olive oil spray as needed
  • 120 grams mayonnaise
  • 60 grams sour cream
  • 2 cloves garlic finely grated
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions

  • Place the zucchini sticks on a plate or tray and sprinkle them with 1/2 teaspoon of the kosher salt. Let them sit for 10 minutes to draw out some surface moisture, then pat them very dry with paper towels.
  • Prepare a breading station with three shallow bowls. Put the flour in the first bowl. Beat the eggs in the second bowl. In the third bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, black pepper, paprika, and remaining 1/2 teaspoon kosher salt.
  • Preheat the air fryer to 400°F for 3 minutes if your model requires preheating.
  • Working a few pieces at a time, coat each zucchini stick in flour, dip it in egg, and press it into the breadcrumb mixture until evenly covered on all sides. Place the breaded fries on a tray or plate as you work.
  • Lightly coat the air fryer basket with olive oil spray. Arrange the zucchini fries in a single layer with a little space between each piece, then lightly spray the tops with olive oil spray.
  • Air fry the zucchini fries at 400°F for 6 minutes. Turn them carefully, spray again lightly if needed, and cook for 4 to 6 minutes more until golden brown and crisp on the outside. Repeat with the remaining fries.
  • While the fries cook, make the garlic dip by stirring together the mayonnaise, sour cream, grated garlic, lemon juice, and parsley in a small bowl until smooth and well combined.
  • Serve the zucchini fries immediately with the garlic dip on the side for dipping.
